Start with the way it will be used
If the final product is a dry powder system, customers usually care about mixing behavior, dosing, storage and transportation. In these cases, soy sauce powder can fit seasoning packs, soup bases, instant food seasoning and compound seasoning powders more easily than liquid soy sauce.
If the final product needs to restore a liquid soy-sauce profile, customers will continue to check reconstitution ratio, color, saltiness and taste after hydration. A common direction in current public materials is soy sauce powder : water = 1 : 3 or 1 : 4, while the final ratio still depends on the customer's formula target.
02 · FLAVOR BASE
Then review the flavor base
Soy sauce powder does not have only one flavor direction. Common bases include high-salt liquid-state soy sauce and low-salt solid-state soy sauce. The high-salt liquid-state base focuses more on fermented aroma and umami layers, while the low-salt solid-state base gives a more direct flavor outline and a controllable color, saltiness and batch range.
These two directions are not simply better or worse. The practical question is whether the customer needs aroma layers, color expression, cost stability, or a more standardized reconstituted taste.
